Escalating rents persuaded Teresa Tam to move her business from Central to Sai Kung, and she used the move as an opportunity to change focus.
Tam previously owned a beauty salon, but was a serious wine lover who had taken the time to gain a Wine and Spirit Education Trust Level 3 Advanced Certificate. She was already importing some wines, and selling them to salon customers. But when she moved to Sai Kung, she decided to give up the beauty business, and focus on food and wine.
T & H, which she set up with Jeff Lam, an experienced F&B professional who had worked for the Holiday Inn, retails wine and a number of speciality food, including Portuguese sausages, hams and cheese, and Avruga herring "caviar" - a cheaper and more sustainable resource than sturgeon roe, which bears some resemblance to Beluga caviar.
The company organises food and wine matching dinners at its own private table in the store, which can be found off a narrow flight of stairs from the street, just opposite Sai Kung's Temple Car Park.
All food and wine in the shop is imported and the company is the sole Hong Kong agent for most of the labels it supplies. The list of boutique wines come from Italy, Portugal and Australia, and range in price from HK$88 for a Vinha das Servas Portuguese red or white to HK$1,200 for a Tebavio Barolo DOCG 2004, or a Ugolforte Brunello di Montalcino DOCG from the same year. Both the latter wines are magnums and come in wooden presentation boxes. T & H offers steep discounts for wines bought by the dozen - 25 per cent - or half dozen - 15 per cent. Tam says that the lower Sai Kung rents have allowed her to keep the wines priced at an affordable level.
